Irish-born and Australian-raised, Etta Head Chef Lorcan Kan combines his formal European culinary training with flavours inspired by his Chinese-Malaysian (Baba–Nyonya) heritage, fascination with traditional Asian cooking techniques, and passion for preservation and fermentation.
His dedication to his craft has taken him around the globe, working in award-winning kitchens, including Attica (AUS), Where The Light Gets In (UK), nahm (BKK), and Contra (NYC), as well as hosting his pop-up supper club, Things Palace.
